I have an antique cider press. The cast iron parts have a rusty finish. Wood parts appear unfinished but show their age from late 1800s.
Online research shows many different strategies oils paints chemicals etc for finishing the various parts. Wood sealed with several layers of polyurethane finish is an acceptable material for making the parts of your cider press that will be in contact with apple mash and cider. This is discussed on page 40 of the plan book.
