Push the second color down so that the bag is filled but try not to let the colors mix. You will be filling it about halfway which will allow you enough control of what you are piping plus give you something to hold onto at the top.
You then fill it up with the icing in the next color and continue piping.

Ive even done this for three colours very successfully. You dont have the problem of having to fill the bags carefully either. You would probably start and finish piping the flowers in one color first.

The coupler is in two pieces. First slide the large part of the coupler into the piping bag. Cut the bag just past the end of the coupler.
Some piping bag instructions will tell you to cut the bag at the threads. Place your piping bag in a tall cup and fold the bag over the rim before adding the frosting to it. That way you have a steady platform for filling and can you can use both hands.
